Jean-Marc has gained experience making sparkling wines around the world, from the Yarra Valley to the USA. Working towards reinvigorating his family label with a modern approach to the craft, he is now considered one of Champagne’s most exciting young guns. This exquisite example of grower champagne is composed of 50% Chardonnay, 40% Meunier, 10% Pinot Noir. This wine differs greatly from other cuvees from Seleque – the base vintage is 4 years older and upon release it has been rested post-disgorging for almost 2 years. I can’t understate just how much difference this extra time makes. Brut Nature wines on premise have no sugar to hide behind so the purity of the fruit has to speak for itself. By allowing the extra time for the wine to harmonise. The acid which seems extreme in youth resolves, resulting in a generous, refined Champagne with excellent purity. Perfect as an accompaniment to richer dishes like Tagliatelle with Sausages, Rosemary and Porcini Mushrooms.
